These adorable mini apple Bundt cakes are the perfect addition to your holiday party dessert table. Not only are they easy to make, these sweet little portions also look elegant and are loaded with rich holiday flavours like fresh apple, cinnamon, nutmeg and cloves.

INGREDIENTS

	CAKE
3	cups peeled, chopped apples (Any variety)
3	cups Gluten Free Flour or All Purpose Flour
3	eggs
1	cup coconut sugar or (1/2 cup cane sugar + 1 cup brown sugar)
1 ½	tsp. Xanthan gum (**only if using gluten free flour that doesn't contain it)
½	tsp. sea salt
1	tsp. baking soda
¼	tsp. ground cloves
½	tsp. nutmeg
2	tsp. cinnamon
¾	cup melted coconut oil or butter
½	cup unsweetened applesauce
1	tbsp. pure vanilla extract
	GLAZE
1	cup icing sugar
1	cup crushed, lightly toasted walnuts (optional)
½	cup coconut sugar or brown sugar
2	tsp. cinnamon
¼	cup coconut oil or butter
3	tbsp. almond milk or milk of choice
1	tsp. pure vanilla extract and stir

INSTRUCTIONS

Preheat oven to 350 degrees

In a medium bowl whisk together:
3 cups Gluten Free Flour or All Purpose Flour
1 ½ tsp. Xanthan gum (**only if using gluten free flour that doesn't contain it)
½ tsp. sea salt
1 tsp. baking soda
¼ tsp. ground cloves
½ tsp. nutmeg
2 tsp. cinnamon

In a mixer bowl beat together until creamed:
1 cup coconut sugar or (1/2 cup cane sugar + 1 cup brown sugar)
3/4 cup melted coconut oil or butter
1/2 cup unsweetened applesauce

Next add:
3 eggs, 1 at a time on low speed beating well after each one.
Add 1 tbsp. pure vanilla extract.
Mix until combined

Pour dry ingredients into the wet ingredients, and fold gently until combined.
Add 3 cups peeled, chopped apples of your choice and 1/4 cup minced raw walnuts and fold gently until combined.
Pour batter into large greased Bundt pan or 4 to 5 mini pans.
Bake for about 50 min or until toothpick comes out clean.
Remove from the oven and cool on baking racks for about 5 min. Remove from pan and continue to cool completely.

Glaze (optional)
In small saucepan combine on medium heat:
½ cup coconut sugar or brown sugar
2 tsp. cinnamon
¼ cup coconut oil or butter
3 tbsp. almond milk or milk of choice

Bring to a boil whisking constantly.
Add 1 tsp. pure vanilla extract and stir. Let cool for about 5 min.
Add 1 cup icing sugar and whisk till completely smooth.
Use whisk to drizzle glaze over cakes.
Top with 1 cup crushed, lightly toasted walnuts.
