INGREDIENTS

	TART
¾	cup raw pecans or walnuts
¾	cup raw almonds
1	cup Medjool Dates (pitted)
1½	cups raw shredded carrots
½	cup unsweetened shredded coconut
1½	tsp pure vanilla extract
1½	tsp cinnamon
½	tsp nutmeg
	Grated zest of 1 large orange
	Pinch of seasalt
	TOPPING
¾	cup raw cashews **Note: Soak 3/4 cup raw cashews in water and cover for at least 2 hours.
1	cup coconut milk ( only use canned variety and scoop out only the solid part at the top when you open the can)
3	tbsp melted coconut oil
2	tbsp pure maple syrup
2 to 3	tbsp coconut water
1½	tsp pure vanilla extract

INSTRUCTIONS

Tart
In food processor place the following and process until crumbly:
¾ cup raw pecans or walnuts
¾ cup raw almonds

Next add the following and process until the mixture comes together:
1 cup Medjool Dates (pitted)
1 ½ cups raw shredded carrots
½ cup unsweetened shredded coconut
1 ½ tsp pure vanilla extract
1 ½ tsp cinnamon
½ tsp nutmeg
Grated zest of 1 large orange
Pinch of seasalt

Prepare a tart pan with removable bottom (round or rectangular) by greasing with a little coconut oil or line a 8 x 8 baking pan with parchment. Press the mixture into the pan and place in the freezer while you prepare the topping.

Topping
In Vitamix or high speed blender place the following ingredients and process until smooth and creamy - use more coconut water if necessary:

Soaked cashews (drained)
1 cup coconut milk (only use canned variety and scoop out only the solid part at the top when you open the can)
3 tbsp melted coconut oil
2 tbsp pure maple syrup
2 to 3 tbsp coconut water
1 ½ tsp pure vanilla extract

Remove tart from freezer and spread the topping evenly over top. Grate fresh orange zest over top (to taste) and add more crushed pecans over top (to taste). Place back in freezer for another 45 mins.

Before serving remove from freezer and let sit for about 10 to 15 mins.
