This lovely holiday meal is quick and easy to make anti-inflammatory breakfast. Cut it up in to 1” X 2” squares and it makes a perfect appetizer.
Sweet potatoes are high in Vitamin C, B6, manganese and fiber. The carotenoid beta-carotene, which gives sweet potatoes their famous color, provides antioxidant protection for our cells. Antioxidants protect us from cardiovascular disease, wrinkles, cancer, toxins and more by combating harmful free radicals. The beta-carotene also converts to vitamin A, which is important for healing the gastro-intestinal tract and
skin.
