Looking to skip on the overcrowded restaurants and have a cozy Valentine’s Day in?
Whether you’re having a date with your significant other or a little get together with some close friends and family, here are some delicious Valentine’s recipes to try with heart-warming, organic ingredients!
PINK OAT PANCAKES WITH STRAWBERRIES:
Make brunch a little sweeter for your sweetheart! In a small bowl, whisk together 1 C organic rolled oats, ¼ C Prestige maple sugar, 1 tsp. baking soda, 1 tsp. baking powder, 1 tsp. cinnamon. Then add 2 eggs, ¾ C milk of your choice (may need more depending on how you prefer the consistency), 1 tsp. pure vanilla extract, and 1 handful of very finely chopped organic strawberries, and mix until all ingredients are well incorporated.
In a large pan on medium heat, add 1 tbsp. of organic butter (or your preferred vegan option) to melt, then heaping spoonfuls of the pancake batter (about 3). Cook until the top starts to bubble, then flip and continue to cook for 2 minutes. Remove from heat and continue to cook the rest of the batter.
Serve warm with organic maple syrup, fresh strawberries and whipped coconut cream, and enjoy!
LEMON AND BASIL PASTA:
In a large bowl, add the zest and juice of half an organic lemon, ¼ C organic olive oil, ¼ C grated L’Ancetre parmesan cheese, 1-2 tsp. garlic powder, 1 tsp. chili flakes (optional), sea salt and pepper to taste, and mix in cooked Pasta Toscana spaghetti (2 servings). Top with fresh basil, grape tomatoes, and serve warm to share with your Valentine!
VEGETARIAN SQUASH AND HAZELNUT BAKE:
Comfort food is always the best way to spread the love! On a large baking sheet with parchment paper, add 2 handfuls of organic chopped butternut squash seasoned with sea salt and black pepper, drizzled with olive oil, and bake at 375 for 25-30 minutes or until tender.
In a large baking dish, add the baked squash, 1 organic sweet onion chopped, 1 handful of chopped (lightly toasted) hazelnuts, 1 cup of organic shredded organic spinach, 1 C organic ricotta cheese, 2 tbsp. olive oil, ½ tbsp. garlic powder, 1 tbsp. oregano, a few leaves of shredded fresh sage, sea salt and pepper to taste, and topped with organic mozzarella cheese to taste. Bake at 325 for 30 minutes, or until cheese has melted and browned slightly. Enjoy with your friends and family for Valentine’s Day!
MINT CHOCOLATE ICE CREAM:
In a food processor, add ½ an organic avocado, ¼ C coconut milk, 2 tbsp. honey, 1 tsp. pure vanilla extract, a few sprigs of organic mint leaves (or 1 tsp. peppermint extract) and blend until smooth. Stir in dark or milk chocolate pieces, and add to a small container. Freeze overnight, and serve the next day with toppings of your choice for a tasty Valentine’s dessert!
